Pici Pasta & Cacio e Pepe

Pici is a thick, hand-rolled pasta from the hills around Siena in Tuscany, traditionally made with just flour and water. Cacio e pepe, "cheese and pepper," is the beloved Roman sauce once carried by shepherds because its ingredients traveled well. In this hands-on class you'll roll each strand of pici by hand, then learn the technique for turning Pecorino Romano, black pepper and pasta water into a silky, creamy sauce.
