Orecchiette, or "little ears," come from Puglia, the heel of Italy's boot, where they're still shaped by hand and classically served with bitter greens. In this hands-on class you'll make a simple semolina dough and learn the thumb-and-knife technique for shaping each piece. Then you'll cook your pasta with Italian sausage, broccolini, garlic and olive oil for a rustic southern Italian dish you'll want to make again and again.
